Celler Les Foes is located in Castellón, province of Valencia, 13 km from the Mediterranean Sea. Roger works with very old vines and local varieties. Also he planted vines in 2007 and started making his first wine in 2014. He works organically a total of 3 hectares of vineyards, with no use of any chemicals and some biodynamic practices. The local varieties for reds are; Embolicaire – 70/90 years old-, Monastrell -53 years old-, Garnatxa -11 years old-, a bit of Carinyena and Cabernet Sauvignon, already planted when he bought the land. The white grape is Macabeo, -47 years old-. The soil is a mix of red sandstone, white and red clay. The selection of grapes is made at the vine when harvested by hand in cases of 15 kilos. At the winery, the intervention is minimum. Use of indigenous yeast, spontaneous fermentation and no addition of sulphites at any stage of the winemaking process. For ageing he uses 300 L old barrels and fiberglass tanks. Roger’s wines shows the purest freshness and fruitiness of Mediterranean grapes well adapted to the climate and terroir. The vineyards and the winery are Organic Certified by the Comité Agricultura Ecologica de Valencia.
