Xavi and Cristina Bernet had always been farmers in the region of High Penedes. In 2003 they decided to go back to Xavi’s grandfather vineyards and produce their own sparkling wines and to stop selling the must to the Cava cooperatives. Located in El Pago-Subirats, Sant Sadurni d’ Anoia, 300-400 meters altitude and surrounded by Mediterranean forest, called Vinyes de Muntanya – Mountains vineyards. They have in total of 7 hectares organic certified since 2008 and the winery in 2015. The soil is calcareous and the main grape for the sparkling wines is the Xarel.lo, from 10-90 years old. In the vineyard they don’t use of any pesticides or herbicides, they use horsetail herb to prevent mildew and sheep compost from the local farmer. In the winery spontaneous fermentation with indigenous yeast and minimum doses of sulphites. The name of the celler is given as their first daughter, Julia Bernet.
Since 2019 they belong to Corpinnat, and they are not part of Cava anymore. Together with other 8 wineries from Cava they joined forces and between them they approve the regulations. They have to be organic farming certified, minimum of 18 months for the second fermentation in the bottle and to produce and bottle within the same winery.
