Prólogo 2015 is the new project from Juan Carlos, the winemaker of Bodegas Carballal, in Rías Baixas, located in the sharp north west of Spain: Galicia. Prólogo means the end of an author’s book. This authentic wine is the latest of Juan Carlos´s range of Albariños. Also refers to an old Albariño style winemaking method, that has created today´s Albariño.
In old times, before DO Rías Baixas was established, producers wrapped the bottles of Albariño with any old locaI newspaper hard copy. Following by that traditional way of ¨labelling¨ Prólogo´s bottle comes wrapped in newspaper that mention Galician old writers being inspired by Albariño wines. Moreover, it protects the wine from the light. In addition, the paper is tied up with the same wire that is used in the hanged vines so called “pergolas”. This Atlantic white wine is made of Albariño grapes owned by Carballal and is taking to the extreme. That means low intervention in the winery with no sulphites added and total free sulphites of 30 mg, plus malolactic fermentation, the use of indigenous yeast and 5 months on its lees. It´s fresh, citrus and with hints of ripe fruits to balance. An amazing and different food friendly Albariño to enjoy every single sip out of it.
Production is limited to 4000 bottles and is available in London and the UK.
