Humus Tosco is a blend of Touriga Nacional and Castelao red grapes from Encosta da Quinta, Lisboa. Hand harvested in small boxes and carefully selected, the grapes were crushed and de-stemmed. Spontaneous fermentation with indigenous yeast in small stainless steel tank, after 5 days of skin contact the wine was racked to another tank, where fermentation finished, aged for 10 months in stainless steel. Nothing was added to the wine. No filtration, no clarification, and no added sulphites.
