Vineyard sorting and manual triage in sorting table, bunches pass through the de-stemmer. 4 days with skins into stainless steel tank with pumping overs. Wild Native Yeasts with spontaneous fermentation between 8 to 10 days, until it is completely dry. Stage of 6 months with primary lees and ageing 6 more months in the same vessel.
