Simone 2015 vintage is made from 100% local grape called Souson. The tiny parcels are spread within Ribeiro wine region, Galicia inland. Jorge Perez, patiently recovered the abandoned old vines, thanks to his expertise farming vines, learnt from his father and grandpa since his childhood. Organically farmed, the grapes are harvested by hand in cases. At the 400 years old traditional winery, which is built underground, the whole bunches go to the tank. After the smooth press the must spontaneously ferments into small French used barrels, aged three years in barrel and one year in barrel before release. Natural fining. No sulphites. Tasting notes: As expected from a Galician red, this wine is very fresh, and shows red fruits, spicy, herbaceous. Very long, mineral and pleasant aftertaste, that invites to have another glass.
