Serradinha Baga is a red wine blend of local varieties 50% Baga, 25% Castelao, 15% Touriga Nacional and 10% Alfrocheiro grapes from Quinta da Serradinha, located north Lisboa region, within town of Leiria, DOC Encostas D’Aire. Located at 17 kilometres from the Atlantic Ocean, vines were planted between 1956 – 1996. The vineyars are called, Casa and Adega, respectively. Hand harvest, grapes are de-stemmed into open vats. The fermentation starts spontaneously with indigenous yeasts and no control of temperature, in old big barrels of 600L and 2400L. Then the wine is aged for 24 months. No filtration, no clarification and a dash of sulphites before bottling in November 2015. The organic mode of production, together with the long Guyot pruning method, has produced with a good balance in the quantity of bunches and foliage. Towards the end of maturation, humid Atlantic winds compensate the dry soil and the primary aroma of the grapes is conserved resulting in a more complex wine.Production of 6000 bottles.
