Moclinejo is the name of the towm, where the winery is located, in the steep Axarquía mountains, near the Capital of Malaga. Its continental climate is characterised by hot summers and cold winters. The grapes are grown in red limestone soil. The wine is exclusively produced from the free-run juice of selected hand-picked over-ripe grapes. The grapes are left out to dry under the sun on “paseros”. The dried grapes are pressed in a traditional olive oil one. When the fermentation is taking place and the alcohol reaches 7% naturally, the sweet wine is fortified up to 17%. The residual sugar content is over 150g/l, but it keeps great freshness. Matured and aged by the criadera and solera system for over 30 years in 500 litres American barrels. Very long fresh finish with nice acidity and tastes of coffee, dried fruits, liquorice and honey.
