L’Ombre is an elegant and mineral white wine made 100% of the local noble grape variety Treixadura. The old single vineyard (70-120 years old) planted in granitic sandstone, was abandoned but recovered by Jorge and it is facing the Miño river, within Ribeiro appellation, Galicia. Following organic farming, no use of any herbicides or pesticides. Hand harvest in small boxes. At the winery skin contact 4 days. The spontaneous fermentation with indigenous yeasts is very slow, around 30 days, which results in a very well integrated and elegant wine. Smooth press, one pumping over per day and left with its lees under a very thick flor for 7 months with no battonagge, in inox tanks. Bottle ageing for a year at a constant temperature of 6-9 degrees celsius, before been released. This is a unique 100% Treixadura, with a pleasant aftertaste. Limited production of 6000 bottles.
