Fino Arroyuelo en Rama it is a dry sherry wine from Chiclana de la Frontera, south easter town in Jerez and close to the Atlantic sea. It belongs the DO Jerez (Sherry). This Fino comes from the single state called Matalian. The soil is Albariza 100%, white limestone and worked totally in Organic, even without copper. Arroyuelo is made of Palomino grape. Alcoholic fermentation takes place spontaneously, with indigenous yeast, from the must extracted from the first press. Then it follows the traditional solera system and has been under the flor (layer of yeast) for 5 years. Selection of the best botas (butts) unfiltered and unclarified. Low in sulphites. Bottling it is done extrictly by preorder, to keep all the freshnesh and bottles are numbered by hand at the back label. Intense aromas, rounded and long finish. Elegant and fine, with notes of saltiness thanks to the proximity to the sea.
