Exsum is a Petillant naturel made of Xarel.lo Vermell grape. Sparkling wine made in the Ancestral Methode, the wine is bottled before the first fermentation is finished. The carbon dioxide, which is given off as the yeast convert the sugars into alcohol, is trapped in the bottle. Single estate vineyard of Xarel.lo Vermell grape, 6 years old. No added sulphites. Production of 1300 bottles.
