The Alvear winery started 300 years ago in the town of Montilla (Cordoba), Andalusia, and has preserved its family character by maintaining its roots while also seeking to generate new visions and ventures. All of the wines are made from the Pedro Ximénez grape. This grape is extremely rich in natural sugars, enabling the wines to naturally reach a strength of up to 15 degrees, without needing any alcohol to be added in order to increase its strength. The Finos are age in the Criaderas and Solera system, stored in American old barrels of 500L called “botas”. With the Flor -flower- covering the top of the wine which gives the characteristic to the Fino. The criadera closest to the floor is called the “solera”, the row above is called “first criadera”, the next to the “second criadera” and so on and so forth. Each criadera or row contains fino which has been aged the same amount of time. The solera contains the oldest wine, which will be the final fino to be bottled. The top criadera is where the youngest wine is stored and then continuous to the next criadera until reaching the solera.
